Hibiscus and Pineapple Batch Mocktails

Ingredients:

  • 2 cups water

  • 4 hibiscus tea bags

  • 5 cups coconut water

  • 4 cups Libby’s canned crush pineapple

  • 1’’ piece fresh ginger, peeled and roughly chopped

  • Ice cubes, to serve

  • 2 cups sparkling water

Directions:

  1. Bring water to a boil, then add tea bags. Allow to steep about 10-20 minutes, until slightly cooled. Remove and discard tea bags, then place tea in a blender.

  2. Add coconut water, pineapple and ginger to the blender. Blend until smooth.

  3. Serve mocktails over ice, and top with sparkling water. Refrigerate leftovers.
