Hibiscus and Pineapple Batch Mocktails

Ingredients:
2 cups water
4 hibiscus tea bags
5 cups coconut water
4 cups Libby’s canned crush pineapple
1’’ piece fresh ginger, peeled and roughly chopped
Ice cubes, to serve
2 cups sparkling water
Directions:
Bring water to a boil, then add tea bags. Allow to steep about 10-20 minutes, until slightly cooled. Remove and discard tea bags, then place tea in a blender.
Add coconut water, pineapple and ginger to the blender. Blend until smooth.
Serve mocktails over ice, and top with sparkling water. Refrigerate leftovers.
